Arugula, washed, 4 oz/120 g.
Kosher salt, 1 Tablespoon.
Extra virgin olive oil, a few drops.

Stage greens into mixing bowl.
Add kosher salt.
Add the olive oil. Many practitioners are tempted to add a little lemon juice or vinegar at this point. If you do so, it WILL cause the Arugula to turn black.
Use paddle to bruise the greens–approximately 5 minutes.
Line a bar towel with a paper towel. Place greens on top, and cover with another paper towel
Fold into envelope.
Vacuum and seal. Allow one hour to cure.
