Stage greens into mixing bowl.Add kosher salt.Add the olive oil. Many practitioners are tempted to add a little lemon juice or vinegar at this point. If you do so, it WILL cause the Arugula to turn black.Use paddle to bruise the greens–approximately 5 minutes.Line a bar towel with a paper towel. Place greens on top, and cover with another paper towelFold into envelope.Vacuum and seal. Allow one hour to cure.
