Ingredients:

  • Fresh or frozen cranberries, 24 oz./700g
  • Fresh garlic, peeled, 2 oz./55g
  • Fresh ginger, peeled, 1 oz./28g
  • Sugar, 1 cup/200g
  • Salt, 2 T/25g
  • White pepper, 1 T/12g

Procedure:

  • Combine all ingredients in 1 Gallon Ziploc Bag.
  • Process SV @183F/84C for 4 hours.
  • Shock in bag to 70F/22C.
  • Blend well, until very smooth.
  • Strain, if desired.
